London bars with cranberries and almonds

Small bites that melt in your mouth, irresistible aromas of chocolate and delicious pieces of fruit and nuts characterize these cookies, which will surely make us ask for a piece more.

Ingredients:

Dough:

3 egg yolks

30 g of sugar

1 vanilla sugar

a pinch of salt

60 g of butter

Lemon sugar or lemon zest

100 g of sharp flour

A pinch of baking powder

Fil:

3 egg whites

a pinch of salt

75 g of sugar

1 vanilla sugar

100 g of ground + 50 g of chopped almonds EuroCompany

Cranberry dip:

100 g cranberries (dried) EuroCompany

100 ml of orange juice

sugar as needed + orange peel

100 ml of wate

Preparation:

Dough

Add sugar, vanilla sugar and salt to the yolks and mix with a mixer. Then add the softened butter and lemon sugar and mix it all together. At the end, add the flour into which we put the baking powder and mix. We will get a solid mixture.
Cover the tray with baking paper. Carefully and with light movements, spread the mixture and place it in a preheated oven at 180 degrees to bake for about 10 minutes.

The sauce

Dry EuroCompany cranberries need to be soaked in water for at least half an hour first. While the cranberries are softening, put water and juice, sugar and spices in a pan. (Add sugar as needed, depending on how sweet you want to make the sauce).
Cook on low heat, stirring occasionally. Add softened cranberries and cook over moderate heat, stirring occasionally. When the sauce takes on the desired thickness, remove them from the heat (keep in mind that they will thicken even more upon cooling).

Fil

Add a pinch of salt to the egg whites and start mixing with a mixer while gradually adding sugar and vanilla sugar. Beat until all the sugar has dissolved and until you get firm snow. Then add ground EuroCompany almonds and mix gently with a spatula.
After 10 minutes of baking, take the dough out of the oven and lower it to 160 degrees. Spread the dough with cranberry sauce and apply snow with almonds. Sprinkle with chopped almonds on top and press them lightly.
Put the cake back in the oven to bake for about 15-20 minutes at 160 degrees. At this temperature, it will both bake and dry a little because it is not a high temperature. When the cake turns light brown, it’s ready. When it cools down, cut into bars of the desired size.
Serve them with bows so that they look like adorable gifts, or with your favorite hot drink. We are sure that it will bring a huge smile to many faces. Good apetite!
