Sunny Bundt Cake with a Hint of Almonds and Dark Raisins

Ingredients:

5 eggs

100 g melted butter

2 whole oranges (with peel)

150 g chopped chocolate

80 g raisins

170 g sugar

150 g all-purpose flour

1 baking powder

100 g ground almonds

1 teaspoon rum

Preparation:

Pierce the whole oranges (with peel) with a fork, place them in cold water, and bring to a boil. Once boiling, cook for another 15 minutes. Drain the water and repeat the same process once more. Then place the cooked oranges in a blender and blend until smooth.

Separate the egg whites from the yolks. Beat the egg whites until stiff peaks form. In another bowl, beat the egg yolks with sugar, then add the blended oranges, melted butter, ground almonds, flour, baking powder, and rum. Mix everything well. Gently fold in the beaten egg whites, then add the raisins and chopped chocolate.

Pour the batter into a baking pan and bake for about 45 minutes at 180°C (350°F), until the top is nicely golden brown.
