Ingredients:

2 eggs

120 ml plant-based milk

2 tablespoons honey or maple syrup

150 g whole wheat or spelt flour

80 g dried apricots (chopped)

40 g dark jumbo raisins

50 g chopped almonds

1 teaspoon baking powde

Pinch of salt (optional)

Preparation:

1. Preheat the oven to 180°C (350°F) and line a baking tin with parchment paper.
2. Whisk the eggs with the milk and honey.
3. Add the flour, baking powder, and salt, then mix well.
4. Fold in the chopped apricots, raisins, and almonds.
5. Pour the batter into the tin and smooth the top.
6. Bake for 30–35 minutes, until golden and a toothpick comes out clean.
7. Let cool, slice, and serve.
