Almost 90 % of carbohydrates in chia seeds are fibers that do not require insulin to decompose and do not elevate blood sugar levels. Recommended consumption: wash one tablespoon of chia seeds (15 g), drain, and soak in water for 10 minutes. When used in cooking, add seeds at the end, to avoid wasting nutrients due to thermic processing. Chia seeds are excellent as an addition to oatmeals, smoothies and pastries.
