Carrot and cranberry cake

This slightly unusual combination will result in wonderful, elegant and so delicate flavors that you will want to come back to again and again.

Ingredients:

2 eggs

1 apple

2 carrots

4 tablespoons of agave syrup or honey

180 g of spelled grits

spice for gingerbread

1 baking powder

30 g of coconut oil

juice of half an orange

a handful of cranberries Eurocompany99

Almonds for decoration.

Cream:

200 g of coconut cream (thick part from a can)

1-2 tablespoons of agave syrup or honey

Preparation:

Grate the apple and carrot, add the wet ingredients, then the dry ingredients. Line a 24 cm mold with paper and pour the mixture. Bake at 180C for about 30 minutes. Check with a toothpick.
When it cools down, cover with cream, sprinkle with Eurocompany99 almonds and Eurocompany99 cranberries
