Raw Date and Almond Cake

Ingredients:

Base:

150 g coarsely ground almonds

2 tablespoons coconut oil

100 g dates

50 g desiccated coconut

Pinch of salt

Cream:

300 g unsalted cashews (soaked overnight in water)

7 tablespoons honey

2 tablespoons cocoa powder

90 g coconut oil

1 teaspoon vanilla extract

Preparation:

1. For the base, blend the almonds, dates, desiccated coconut, coconut oil, and salt until you get a sticky mixture. Press it into a cake tin and place it in the freezer.
2. For the cream, drain the soaked cashews, then add the honey, cocoa powder, coconut oil, and vanilla. Blend until smooth and creamy. Pour over the base and smooth the top.
3. Freeze the cake for 2 hours. Before serving, let it sit at room temperature for 10–15 minutes. Decorate as desired.
