Chocolate Almond Muffins

Chocolate almond muffins are a moist and delicious treat that combines the rich flavor of cocoa with the crunch of almonds. They’re perfect for breakfast, dessert, or a sweet snack with coffee or tea.

Ingredients:

2 eggs

100 ml maple syrup or honey

100 ml plant-based milk

60 ml coconut oil (melted)

150 g whole grain flour or spelt flour

30 g unsweetened cocoa powder

1 teaspoon baking powder

A pinch of salt

40 g sugar-free chocolate (with 70% cocoa or more), chopped

30 g chopped almonds (plus a little extra for topping)

Preparation:

1. Preheat the oven to 180°C (356°F).
2. In a bowl, mix eggs, syrup/honey, milk, and coconut oil.
3. Add the dry ingredients: flour, cocoa powder, baking powder, and salt. Stir in the chocolate and almonds.
4. Divide the mixture into a muffin tin and sprinkle with almonds.
5. Bake for 18–20 minutes, or until a toothpick comes out clean. Let cool.
