Ingredients:

2 ripe bananas

1 egg

2 tablespoons coconut oil (melted)

2 tablespoons maple syrup or honey (optional)

100 g finely ground oats

100 g ground roasted hazelnuts

½ teaspoon baking powder

½ teaspoon cinnamon (optional)

A pinch of salt

Preparation:

1. Preheat the oven to 180°C (356°F) and line a baking tray with parchment paper.
2. Mash the bananas, then add the egg, oil, and syrup. Mix in the ground hazelnuts, oats, baking powder, cinnamon, and salt.
3. Shape the cookies using a spoon and place them on the tray.
4. Bake for 15–18 minutes, until the edges turn golden.
5. Let cool and enjoy!
