Spaghetti with Pea and Pistachio Pesto

For all pea lovers, we have a perfect recipe that doesn’t require a lot of time or ingredients. Enjoy this Italian specialty in an exceptional way with the addition of crunchy pistachios. Buon appetito!

Ingredients:

400 g EuroCompany99 pea halves

30 g EuroCompany99 Perfect Day pistachios

35 g grated parmesan

1 clove of garlic

salt and pepper

50 g chopped goat cheese

50 ml cooking cream

olive oil if desired

Pasta spaghetti or other, according to desire

Preparation:

Cook peas in salty water. Blend 2/3 amount of peas and leave the rest on the side.

Add pistachios, grated parmesan, chopped garlic, salt and pepper to blended peas and blend it all again.

Finally add olive oil, cooking cream and chopped goat cheese to the mixture.

Mix with hot pasta and decorate with grain peas and/or pistachios.

Serve either as a separate meal or as an appetizer with a fish meal.
